PUMPKIN! .. salad dressing

I found a way to add pumpkin, without cutting, carving and roasting one... onto a salad! Yes, life IS good. I put a few tablespoons of this stuff on a big bowl of romain, goat cheese, raisins and walnuts. It is truly a fall delight and made me and my belly so happy !!


Pumpkin Dressing:
1 cup of canned 100% pumpkin
1/3 cup of hazelnut oil (Or olive, or best you have)
1 tbsp of chia seeds
(or poppy or sesame, the crunchy addition is nice but the seeds are optional)
1 tsp of balsamic vinegar
a splash of water
a pinch of cayenne


Put all ingredients into a blender and puree for about a minute. MAGICAL!

High vitamin A, fibrous dressing
instead of store bought bottles of chemical goo!

Good Lord, I love pumpkin!!!
